INGREDIENTS
1 tbsp olive oil
Salt & freshly ground black pepper
2 tbsp butter
1 small onion, thinly sliced
1 cup mushrooms, sliced
2 cloves garlic, minced
½ cup beef or veal stock
2 tbsp fresh parsley, chopped
Instructions
Season and sear. Pat steaks dry and season with salt and pepper.
Heat olive oil in a skillet over medium-high heat.
Sear steaks 3–4 minutes per side until nicely browned. Remove and rest.
Cook the vegetables. In the same pan, add butter
Cook onion until soft and lightly golden, about 5 minutes.
Add mushrooms and cook until browned. Stir in garlic and cook briefly.
Make the sauce. Pour in stock and scrape up any browned bits.
Simmer 3–5 minutes until slightly reduced.
Finish. Return steaks to the pan and spoon sauce over to warm through.
Sprinkle with fresh parsley before serving.
