This season, I’ve made a shift on the farm that feels like a natural extension of everything spring represents.

I’m moving toward offering rose veal.

Not as a departure—but as a refinement.

It allows me to work within the land’s capacity, raise animals in a way that feels aligned, and offer something that fits this season of lighter, more intentional meals.

The calves stay with their mothers longer. The timeline is more thoughtful. The result is meat that’s tender, balanced, and well-suited to how many of us want to eat right now.

Spring has a way of clarifying direction.

What’s working. What needs to change. What’s worth building on.

This feels like the right next step.
